How to Cook the Perfect French Steak

Although family is at the heart of the holiday season, there’s an undeniable romance about this time of year that always has us contemplating the ideal date night. Time and time again, we come back to Entrecôte

Entrecôte is our go-to spot for French cuisine due to its immaculate ambience and mouth-watering brasserie classics. We sat down with Jason Jones, owner of Entrecôte, Le Petit Marché, and a newly opened Euro-centric bar—Gigi—to discuss his recipe for the perfect steak frites.

Jason’s inspiration for the restaurant came during his first trip to Paris when he dined at Le Relais de l'Entrecôte, a classic French bistro famous for its steaks. “The Parisian charm, the single-focus menu, the energy was unforgettable, and it planted the seed for Entrecôte in Melbourne.” 

It’s easy to spot the Parisian influence in the Melbourne brasserie’s chic ambience and understated menu.  

“Over the past decade, Entrecôte Melbourne has grown into what we lovingly call “the party palace of Prahran,” Jason tells us. “We’ve created a space that blends classic French elegance with a vibrant, bustling atmosphere, including a pianist to set the scene. It's about capturing the lively energy of Paris and bringing it to our corner of Melbourne.” 

Now, Jason and his team have made it possible to capture that taste of Paris at home with Entrecôte à la Maison—a selection of house sauces, dressings, seasonings, and more.  

“With essentials like our Secret Herb Butter Sauce, French Dressing, and Pear & Ginger Chutney, you can easily elevate your everyday dishes,” Jason shares. “Our seasoning is perfect for steaks, but it’s also lovely on roast veggies. And the chutney makes a wonderful pairing with cheese.  

“Each product is a little slice of Entrecôte, designed to make home cooking just a bit more magnifique.”

Jason’s tips for le steak parfait 

“To achieve that perfect steak at home, start with a good-quality, marbled cut and our Entrecôte à la Maison Seasoning. It’s the best way to add that signature touch. Use a hot cast iron pan, add a few cloves of garlic to the pan for extra depth, and make sure to let the steak rest a few minutes after cooking. This simple technique preserves the juiciness and lets the flavours shine.”

For two servings:

Remove your Entrecôte steaks from the fridge and let them come to room temperature for about 30 minutes. This will allow the steak to cook more evenly. 

Generously season both sides of each steak with the Entrecôte à la Maison Seasoning, ensuring the steak is evenly covered. 

Heat a grill pan or a skillet over medium-high heat. Once hot, add the steaks. Cook the steaks for about 4-5 minutes on each side for a medium-rare finish or adjust to your preferred level of doneness. A good steak should have a golden-brown crust. 

While the steak is cooking, prepare the salad and frites. For the salad, slice radishes thinly. Mix with green leaves and toss with a generous dollop of our French Dressing. Fry the frites in a deep-fryer or according to the instructions on the packet. 

Once the steaks are cooked, remove them from the heat and let them rest for at least 5 minutes to allow the juices to redistribute throughout the steak. 

Heat the Secret Herb Butter Sauce according to the packet instructions. Spoon a generous amount onto the steak, et voilà ! Plate up and enjoy.
